A While ago I did four small pieces for my friend Tommaso Tonioni’s menus while He was resident Chef at Michelin-starred Achilli al Parlamento in Rome.
While at Achilli, He developed a seasonal project themed with the four alchemic phases of the Magnum Opus, a theme We both love.
Nigredo, Albedo, Citrinitas and Rubedo with their meanings and colors led the whole thing on four different menus.
His deep sensitivity for food culture and our passion for philosophy journeyed Us in an exploration of the themes applied to tastes and to the tastes along the seasons. It has been a lovely project while in the middle of the 2020 pandemic and it cheered us, eventually going from black to red ourselves.
